Dark Chocolate Amaretto Cookies

Because I feature a lot of cocktails on my blog I knew I wanted to add something boozy to the cookies that I created. I played around with bourbon and finally landed on

amaretto due to my secret love affair with the liquor


2 eggs

1 cup hot chocolate

1 cup butter

1 cup sugar

2 tsp vanilla

1 tsp salt

2 cups flour

6 tbsp amaretto

2 tbsp brown sugar

1 3/4 cup dark chocolate chips

4 tbsp milk


Preheat oven to 350 degrees F. In a large mixing bowl add butter, sugar, eggs, vanilla and 4 tbsp amaretto. In a separate bowl mix flour, cocoa and salt. In a median sauce pan over medium heat add 1 cup of dark chocolate chips, milk, and 2 tbsp amaretto until melted.  Slowly mix all ingredients together and then fold in 3/4 cup of dark chocolate chips. Roll dough into small balls on a baking pan and out in the oven for 12-14 minutes or until cooked. 

I definitely recommend enjoying with a cup of coffee and fresh baked cookies (or nuke in the microwave for about 5-10 seconds so the chocolate chips are gooey).
